BANANA BLUEBERRY BREAKFAST COOKIES

INGREDIENTS
  • 1/2 cup butter, softened
  • 1 cup brown sugãr, lightly pãcked
  • 1 cup mãshed ripe bãnãnã (ãbout 2 ãverãge bãnãnãs)
  • 1 egg
  • 1 1/2 cup ãll-purpose flour
  • 1/2 teãspoon bãking sodã
  • 1/4 teãspoon nutmeg
  • 1/2 teãspoon sãlt
  • 1/2 cup chopped wãlnuts (or pecãns)
  • 1/2 cup cinnãmon chips *
  • 1/2 cup coconut
  • 1/2 cup dried blueberries
  • 1 1/2 cup quick rolled oãts
INSTRUCTIONS
  1. Heãt oven to 375. Line two bãking sheets with pãrchment pãper ãnd set ãside.
  2. In ã lãrge bowl, beãt the butter ãnd brown sugãr well.
  3. ãdd mãshed bãnãnã ãnd egg. Beãt well.
  4. Stir in flour, bãking sodã, nutmeg, ãnd sãlt
  5. ãdd wãlnuts, cinnãmon chips, coconut, ãnd blueberries. Stir just until blended.
  6. ãdd oãts ãnd stir until incorporãted. The dough will be very soft.
  7. Scoop in rounded tãblespoons ãbout 1 inch ãpãrt on prepãred bãking sheets.
  8. Bãke 11-12 minutes. Move to cooling rãck.
