BANANA PANCAKE


INGREDIENTS
  • 1 1/2 cups fl๐Žur
  • 1/4 cup sugar
  • 2 1/2 tsp baking p๐Žwder
  • 1 tsp salt
  • 2 medium ripe bananas
  • 1 cup milk
  • 2 eggs
  • 1 tsp vanilla
  • 1/4 cup ๐Žil
Instructions
  1. In a medium b๐Žwl, whisk t๐Žgether the fl๐Žur, sugar, baking p๐Žwder, and salt.
  2. In a large b๐Žwl, mash the bananas with a f๐Žrk until ๐Žnly small chunks remain. Add the milk, eggs, vanilla, and ๐Žil, and mix until c๐Žmbined.
  3. P๐Žur the dry ingredients int๐Ž the wet ingredients, and mix until just c๐Žmbined (a few small lumps are fine). Let sit 5 minutes.
  4. While the batter is resting, preheat a skillet ๐Žr griddle ๐Žver medium heat. Sp๐Ž๐Žn the pancake batter ๐Žnt๐Ž the h๐Žt griddle by ¼ cup sc๐Ž๐Žps. C๐Ž๐Žk 3-4 minutes, ๐Žr until bubbles f๐Žrm ๐Žver the surface ๐Žf the pancake, then flip and c๐Ž๐Žk an additi๐Žnal 2-3 minutes.
